Our Ceylon Cinnamon Quillsare made from the inner bark of Cinnamomum verum(also called Cinnamomum zeylanicum), sourced from Sri Lanka, and crafted into delicate, tightly rolled cinnamon sticks (quills). Unlike many cassia cinnamon sticks, these quills are soft, fragile, and easy to break, offering a more gentle, refined aroma and flavor.
Appearance & Structure
Light tan to reddish-brown in color, with a uniform, elegant look
Thin, multi-layered quills rolled inwards—so delicate they can be broken by hand
The bark layers are very thin (often less than 0.08 mm) and rolled into a single spiral.
Quills have a “scroll” or “cigar” shape, with the bark curling inward on drying.
Flavor, Aroma & Benefits
Gentle, sweet, floral aroma with warm, subtle spiciness —not sharp or harsh
The taste is mellow, lightly sweet, and balanced.
Because the quills remain intact until use, they retain their essential oils and aroma until cracked or broken.
Much lower coumarin content compared to many cassia cinnamon varieties, making it safer for regular consumption.
Uses & Applications
Use whole quills to infuse into tea, chai, mulled beverages, syrups, custards, stews, and sauces
Break or optionally grind just before use when you need powder
Ideal for baking (cakes, pies), desserts, custards, compotes, and drinks
Once broken, the inner bark can be used like cinnamon powder but with the freshness advantage
